It's Been Too Long

Greetings gluten free peeps! I know it's been a really, really long time since I have last posted on gluten free food. I've been keeping busy with designing some new knitting patterns and studying for my CMP (Certified Meeting Planner) exam. I've been craving French Dip sandwiches for a long time now. Sadly, all of them are not gluten free. So I took to Pintrest to find a recipe that I could modify. Since this was one of our first cool nights, I thought now was the time to try it. I used my pressure cooker to help speed up the process. There are many great crock pot recipes, but I wanted this pretty quick.

I used organic and gluten free (obviously) supplies. Here's what you will need:
Beef broth
French onion dip
condensed cream of mushroom soup
garlic powder
garlic cloves
onion
pot roast
g free rolls

Slice up the onion and peel the garlic and toss into pressure cooker. I used previously peeled garlic. Much easier to work with.

Add in 14.5 ounces of beef broth to the mixture.

Next I mix the condensed soup and the dip mix together. Looks kind of weird here, I know.

There...much better.

Stir everything together. Here is where I added in the garlic powder. Use around 1/4 tsp. You can also add in salt and pepper if you so desire. I didn't.

Thinly slice up your pot roast.

Add in the beef slices in separately. This will help to ensure that each piece is covered.

Stir everything together.

I added in some fresh rosemary from my garden. This is totally optional.

I used the chicken and meat setting on my pressure cooker and set it for 15 minutes.
After the cooking, allow the pressure to drain off on it's own.

I am madly in love with the Schar brand. They make the best breads and other great products. I bought this at Raley's, our local grocery store.

And ta da! I used the juice as my dip. I imagine it could be cooked down some, but I was too hungry to wait :o)
