One pan, roasted chicken & veggies

I've started meal prepping in an attempt to get my family eating healthier. So far it's been pretty good. My first attempt was a Greek chicken with taziki sauce over brown rice and a Greek salad. It was good. Everything was homemade, organic and gluten free.
Week number two comes along and I'm like I got this! HA! I decided to invent my own meal prep by combining two of my fav dinner recipes into one. Why not, right?

Ok, this was actually easier than it looks. A lot of the meal prepping recipes I see are like pretty involved. This one, not so much. Nice, right?
Recipe:
First things first: turn on oven to 425 degrees
All my produce and meat is organic and was purchased at Raley's. My 8 meals cost a total of $40. That's cheaper than the $5 menus at fast food places!
8 chicken thighs (skin optional)
Whole, white mushrooms (the biggest box you can find or 3 of the regular sized ones)
2 packages of cherry tomatoes
1.5 pounds of fresh green beans
2 white onions, quartered and separated
Minced garlic (I have a package of already minced garlic so I used 2 big spoonfuls)
Olive oil or avocado oil
Garlic powder
Lemon pepper
Pink Himalayan salt
Pepper
Optional: gluten free brow rice penne pasta. Could do quinoa or organic brown rice.
Feel free to play with the veggie options. Add in bell peppers or zucchini or broccoli even. Have fun with it. Food should not only be healthy but tasty and pretty.
Step 1: rinse everything really, really well.
Step 2: slice up veggies and toss into a roasting pan.
Step 3: pour desired amount of oil onto veggies and coat them with a spoon.
Step 4: add in minced garlic and seasonings and stir it in.
Step 5: place chicken on veggies and lightly coat with oil and seasonings.
Step 6: place pan in oven and cook for 55-60 minutes or until chicken is done.
Step 7: optional- cook pasta and place into containers.
Once everything is all cooked, place into your meal prep containers and enjoy. Recipe makes 8 servings.

My containers have little dividers. I got these at the dollar tree. I know. Horrible plastic product instead of glass. I wasn't sure I was going to continue this prep thing. So far I really like it, so I may need to invest in glass containers.

Meals are assembled. Looks cool, huh!

Here it is the next day. I microwaved it for a couple of minutes and it was AMAZING!!!
