Organic Chicken Fajita Salad

This bowl of deliciousness, is completely organic, gluten free and full of protein! It's fast to make and guilt free eating.
Ingredients make the meal...in more ways the one. If you have subpar seasonings, food can taste bland. I used fresh ingredients from Raley's, our local grocery store that carries a nice variety of organic produce and other foods.
Recipe:
All my ingredients with the exception of the seasonings are organic.
Olive oil
garlic powder
taco seasonings
minced garlic
onion
romane lettuce
tomatoes
red bell pepper
green bell pepper
two chicken breasts
sour cream or Greek yogurt
shredded cheese

Olive oil and garlic powder purchased at Costco. My taco seasoning came from MarketSpice at Pikes Market.

Mmmmm! Fresh veggies!

Costco sells organic chicken breasts that are individually packaged and in the freezer section.

Wash and pat dry the chicken. Slice into fajita sized strips.

In a skillet, heat olive oil and add in onion slices.

While onion is cooking, add in a big dollop of minced garlic. I didn't measure anything out on this recipe. It's super hard to mess up.

Toss in the chicken and give it a stir.

Dump in as much seasoning as you like. This is all about your preference. I like mine heavily flavored.

Next I added in the garlic powder and stir some more.

Add in the bell peppers before the chicken strips are fully cooked. This will keep your peppers crisp.

Turn heat to low and simmer.

Wash and prep your romaine lettuce.

Chop up nice and fine.

Action shot!

Begin building your fajita bowls. Place a nice bed of lettuce down.

Next place the fajita mixture on top of the lettuce.

Add in some cheese, sour cream or Greek yogurt, tomatoes and what ever else you like on your fajitas.
