Easy, Gluten Free Mongolian Beef

I'm super enjoying the meal prepping. Lunches are made for the week. Bam. Done. I've done two weeks worth of meals with chicken. Now it's time to try some beef. I began my search on Pinterest. Where else do you go to find fabulous recipes.

I found this gem on a blog called the chunky chef. Here's the link: Mongolian Beef
Recipe:
2 tsp vegetable oil
1/2 tsp fresh ginger grated. Or 1/4-1/2 tsp ground ginger
1 Tbs minced garlic
1/2 cup soy sauce
1/2 cup water
3/4 cup packed brown sugar
1 cup of vegetable oil for frying
2 green onions, sliced
1 pound of flank steak or fajita beef
1/4 of corn starch
2 Tbs of soy sauce for marinade
2 Tbs of housin sauce for marinade
She made coconut rice to go with this, but I made organic brown rice instead. After all, this is to lose weight and get healthy.
Prep:
Thinly slice your flank steak and place into a big ziplock bag. Dump in corn starch, the 2 Tbs of soy sauce and housin sauce. Shake baby, shake. Set aside.
While the meat is chillin in the marinade, make the Mongolian sauce as follows:
Heat up a small amount of oil to sautée garlic and ginger. Add in the 1/2 cups of soy sauce and water. Add the brown sugar and bring to a light boil. Stir until it thickens up. Set aside.
In a large pan, heat up the 1 cup of oil. Add the meat in and fry for a few minutes. Place semi-cooked meat on a paper towel and drain oil. Put meat back into the pan and dump in the Mongolian sauce. Cook and serve up. I sprinkled the onion slices and seasame seeds. Serve over brown rice.
I doubled my recipe so I could use it in my meal prep.
I used kikoman's gluten free soy sauce and dynasty's housin sauce which is also gluten free. I bought all my ingredients at Raley's. Brown rice came from Trader Joe's.
