Baked Potato Chips

I am a big fan of potatoes. In any shape and form. As I am focusing on being healthier and eating better this year, well every year, I'm looking for ways to make my snacks healthier. 

Enter the mandoline. This baby slices and dices! 

I wanted to try out my new kitchen toy and see what I could make. I have potatoes on my counter...mandoline...I know! Potato chips! I went to my favorite go to do everything app...Pinterest and found an easy recipe. 

I used the 1/8" slicer and set to work. 

I know, this picture is not of the potato slices...but it is an action shot. 

I sliced up 2 potatoes and threw them into a bowl of cool water to clean them some more and help rid them of some starch. 

After a little soak, I patted the slices dry. 

Next step: toss the slices back into a bowl and toss them with olive oil and salt. 

Place the slices in a single layer on a cookie sheet lined with parchment paper. Bake in the oven until lightly browned and edges curl up. 

I was impatient and cooked them all together. Single layers cook better. 

Here's the official recipe:

Preheat oven to 400° 


  • 2-3 russet potatoes 

  • 2 tbs Olive oil

  • Salt

  • Parchment paper 


Slice potatoes into 1/8" slices. A knife is a good substitute if you don't have a mandoline. 

Optional: soak slices for a half hour to remove more starch. 

Toss slices in olive oil and salt. 

Place slices on baking sheets lined with parchment paper. 

Cook for 18-25 minutes until lightly curling or brown.
