Avocado Toast

Where has this been my whole life?! I've never made this before. I don't know why, but I haven't. I was scrolling through Pinterest and this came up. I've never made it before, so why not give it a whirl.
I love avocados! That's one of the benefits of living in California, is that you can purchase avocados year round. This is a skinny, healthy meal, packed full of protein, good fat and carbs. Yes, carbs can be good....depending on the source. Obviously carbs from candy or potato chips are not good carbs.

Ok, now for the recipe. It's ridiculously easy.
2 slices of bread: I used Scharr's gluten free artisan bread
1 small avocado
2 eggs
Seasonings of your choice. I used salt, pepper, garlic powder and lemon pepper
Toast your bread. While that's going begin cooking the eggs. After the toast is done, cut your avocado in half and mash it up. Spread equally on both slices. Season the avocado. Be sure to check on your eggs. Once the eggs are done, place each egg on the toast. Add more seasoning if you like. I like my yikes gooey, so I didn't fry them for too long. I also used organic olive oil spray.
Enjoy!
This is great for breakfast or lunch. Add in some prosciutto to mix it up. Have fun and try out different ways of seasoning it. Add in some cheese, meat or lime juice even. Be creative and have fun. Food should be fun and tasty and...healthy 😊 🍳
