Cucumber Rolls

Sometimes it's a real struggle to eat healthy. Either the food tastes meh, it's not filling or it's just plain boring. I wanted to try and making something healthy and tasty!

This is what I came up with....
Recipe:
Organic English cucumber
Organic sprouts
Organic avocado
Organic green onion
1 can of Kirkland's organ canned chicken
Mayo with olive oil
Garlic powder
Celery salt
Dill
Toothpicks

Cut your cucumber into strips lengthwise. I used my mandoline to get thin slices. Set off to the side.

Mix up chicken salad with mayo, green onion and seasonings.

Next, slice your avocado into strips. Thoroughly rinse your sprouts.

Now begin the assembly. Lay out your cucumber strips. Place a piece of avocado onto the cucumber. Place some sprouts next to it. Then add a dollop of chicken salad. Roll somewhat tightly and pin with toothpick. Repeat until you have your desired amount.
Sprinkle some salt and pepper on the rolls and enjoy!

Options: you could use lunch meat instead or add in tomatoes. Mix it up and be creative! Have fun!
