Gluten Free Onion Rings

Yes. You read that correctly. Gluten. Free. Onion. Rings. Super easy to make, somewhat healthy also and incredibly delicious.

And here's how:
One large, white organic onion, sliced and turned into rings
2 eggs
Gluten free flour. I used cup for cup
Gluten free bread crumbs. I used Scharr brand.
Garlic salt
Onion powder
Paprika
Salt
Pepper
SunCoco oil (organic sunflower and coconut oil mixed)
Crack and whisk eggs in a bowl and set aside.
Pour some flour into a plate, add in some seasonings.
Pour bread crumbs into a bowl and add seasonings.
Take an onion ring and dunk in egg, then coat it with flour. Put floured ring back into the egg and then coat with the bread crumbs. Set aside. Repeat this process until you have the desired amount of rings. I had some leftover mixtures so I sliced up some raw chicken and made chicken tenders.
In a skillet, pour in the oil and turn up the heat. It won't take long to heat this oil. Place battered rings into the oil for about 30 seconds. Then flip rings and cook for another 30 seconds. Place cooked rings onto a plate lined with a paper towel.

For the chicken, I cooked it in the oil for around a minute and 30 seconds and flipped.

For a fun dipping sauce:
Equal parts mayonnaise and sour cream, lime juice, garlic powder and chili powder. Stir and add seasonings until desired taste is reached.
